Dukkah Two Ways For The Phases Of Your Cycle

Dukkah is the perfect entertainment food for adding a change to the common dips and cheese platter.  Not only that, the mixture of Nuts, Seeds and Spices dipped with fresh bread and olive oil will keep your taste buds singing for more.

Dukkah can also have health benefits on our period cycle.  Throughout the month, oestrogen and progesterone levels are playing a game of cat and mouse, as they are continuously going up and down.   For those who experience bad PMS,  this rollercoaster ride can be detrimental to your way of living. Balancing your hormones can attribute to reducing your moods and pain associated with unbalanced drops and rises in oestrogen and progesterone.

We can look at Dukkah playing a role using a seed rotation to balance our hormones. Follow the recipes below to help in rebalancing your hormones.  Or just enjoy some tasty variations of Dukkah that will have all your party guests raving at how good it tastes!

For me, I eat it regularly.  I couple it with pickled veggies and olives. It is a great way to balance hormones and have great gut health.

FOLLICULAR PHASE – Days 1-13 (approx)

Pumpkin Seed and Flax Seed Dukkah
INDGREDIENTS:
DRY ROAST MIX
  • 120g Pepitas (Pumpkin Seeds)
  • 60g Flax Seeds
  • 60g Macadamia Nuts
  • 60g Brazil Nuts
  • 30g Cumin Seeds
  • 50g Coriander Seeds
  • 20g Fennel Seeds
AFTER COOL DOWN MIX
  • 1 tsp Himalayan Salt
  • 1 tsp Peppercorns
  • 1 tsp Dried Thyme Leaves
DIRECTIONS:
  1. Place Dry Roast Mix in a pan on medium heat and dry roast for approximately 10 -15 minutes or until the seeds and nuts start to colour.
  2. Take the pan off the heat and allow to cool
  3. Once cool, place Dry Roast Mix in a blender. Add After Cool Down Mix to bowl.
  4. Pulse the ingredients 2-3 times.  The mix should resemble a coarse powder.
  5. Place in glass jars.  If not using straight away, place in fridge or freeze until ready to use.

 

LUTEAL PHASE – Days 14-28 (approx)

Sesame Seed and Sunflower Seed Dukkah
INDGREDIENTS:
DRY ROAST MIX
  • 120g Sesame Seeds
  • 80g Sunflower Seeds
  • 60g Macadamia Nuts
  • 60g Cashew Nuts
AFTER COOL DOWN MIX
  • 1 tsp Himalayan Salt
  • 1 tsp Peppercorns
  • 1  Sheet of Nori Paper shredded
DIRECTIONS:
  1. Place Dry Roast Mix in a pan on medium heat and dry roast for approximately 10 -15 minutes or until the seeds and nuts start to colour.
  2. Take the pan off the heat and allow to cool
  3. Once cool, place Dry Roast Mix in a blender. Add After Cool Down Mix to bowl.
  4. Pulse the ingredients 2-3 times.  The mix should resemble a coarse powder.

The perfect accompaniment to my Gluten Free Fennel and Cumin Bread (yes I just love spices!).  Add a dish of olive oil and dukkah on a platter and serve with fresh Bread.
